INSTANT JALEBI

JALEBI

A quick and easy sweet recipe under 30 mins. Learn how to make Jalebi that are crispy, juicy & delicious. Jalebi is one of the most popular desserts from Indian subcontinent. Jalebi is a spiral shaped crunchy sweet dipped in saffron laced sugar syrup, the perfect traditional Indian sweet made of all purpose flour, gram flour and sugar syrup. 

There are 2 ways to make Jalebi:
  1. Traditional method made by fermenting the batter:In traditional method, batter prepared from maida and yogurt is fermented for 24 hours.
  2. Instant version without fermentation:In instant method, the batter is prepared using instant yeast and doesn’t require fermentation.

Some point to keep in mind while trying to make homemade jalebi: 
  1. Consistency of the batter:It should be flowing consistency but not super thin or thick. If the batter is dispersing in the oil as you pipe it, maybe it’s too thin and you need to add some flour to it. If you are not able to pipe it, add little water but always remember to add 1/2-1 teaspoon at a time and then check and see if you have achieved the desired consistency.
  2. Temperature of the oil:when you pipe the jalebi batter, make sure the oil is at low heat. Too high and batter will be all over in oil as you try to make the jalebi shape. So keep temperature low when you pipe the batter in hot oil. Increase the heat once piped and then fry till crisp.

Here we are making jalebi with instant method. Making jalebi at home is easy and can also be made by a beginner. So let’s see how:

Ingredients:

For sugar syrup
1 cup sugar
1/2 cup water
Saffron 
1 tsp lemon juice
1/4 tsp cardamom powder

For jalebis
3/4th cup maida
1 tsp curd
1 tsp vinegar
1/4th cup water
1/4 tsp baking soda
Pinch of red food colour (optional)
Oil
1 tsp ghee

Recipe:
  1. In a pan, add sugar and water and stir till sugar dissolves.
  2. Add saffron threads. And stir continuously to get 1 string consistency of the syrup. Turn off the flame.
  3. To this add lemon juice and cardamom powder.
  4. Stir and cover it to rest.
  5. In another bowl, add maida, curd and food colour. Combine this well.
  6. To this add vinegar and water and whisk for another 5 minutes.
  7. In a frying pan, pour oil and let it turn hot, to this add 1 tsp ghee.
  8. Add baking soda to the batter and mix gently, it should be of flowing consistency. Now fill this batter in a sauce bottle.
  9. Make round spirals of this batter in oil in medium flame and let it float (take approximately 30 seconds). Flip over till it turns golden and crispy.
  10. Soak these hot jalebis in previously prepared warm sugar syrup for 30 seconds on both sides.
  11. Shake lightly o get rid of excess sugar syrup.
  12. Your crispy and juicy instant hot Jalebis are ready to serve.

Jalebi is often enjoyed with rabri (which is thickened milk) and the combination is simply amazing! It also tastes great with milk. Hot homemade jalebi with milk! Everyone loves it that way in my home. Hope you guys also enjoy this special treat!

NO YEAST PIZZA

PIZZA


Pizza is a savory dish of Italian origin, consisting of a usually round, flattened base of leavened wheat-based dough topped with tomatoes, cheese, and often various other ingredients baked at a high temperature, traditionally in a wood-fired oven. Classic homemade pizza recipe, including pizza dough and sauce. Make perfect pizza at home! This pizza has a crisp, light & fluffy base. The sauce is amazingly delicious & aromatic. Let me tell you that homemade pizza recipe is one of the easiest you can ever make and once you get to start making your own pizza at home, you will never buy ready made pizza base or order another takeaway.

Let’s start making the pizza step by step.
Step 1: Pizza dough
This homemade pizza dough is a super fast and simple recipe made without yeast and SO easy to make! Let’s start:

Ingredients:
2 cups
2 tbsp Curd/Yogurt
2-3 tbsp water
1/2 tsp baking soda
1 tsp baking powder
Olive oil
Salt

Recipe:
  1. All ingredients to be at room temperature.
  2. In a large bowl, whisk together the flour, baking soda, sugar and salt. In another bowl whisk together curd and oil. Now combine the flour mixture and curd mixture and stir to combine.
  3. Kneading the dough is so easy, simple and fast. Add water and form a dough. Once everything comes together knead the dough for 5-10 minutes or until a smooth and soft dough is formed. If at all the dough is little sticky dust some flour and knead the dough.
  4. Handling this dough is so easy and not messy. The dough is not sticky and that is the best part. Apply 2-3 drops of oil onto it.
  5. Resting the dough is not necessary but I let it rest for few minutes while making the pizza sauce is ready.

Step 2: Pizza sauce
Pizza sauce is tomato based sauce prepared by blenching tomatoes and spiced with herbs and garlic.

Ingredients:
3 ripped red tomatoes
2 tsp oil
3 cloves garlic, finely chopped
1 small dried red chilli
1/2 onion, finely chopped
2 tbsp basil leaves, finely chopped
3/4 tsp sugar
1/2 tsp red chilli powder
salt to taste
1/2 tsp oregano
1/4 tsp chilli flakes
1 tbsp tomato sauce

Recipe:
  1. Firstly, slit x on bottom of tomatoes.
  2. Add tomatoes (slitted at bottom) along with dried red chilli into boiling water and blanch.
  3. Cover the pan and boil for 3-4 minutes or till the skin starts to leave from tomatoes.
  4. Further, peel the skin of tomatoes once they cooled completely.
  5. Then take 2 peeled tomatoes and the red chilli and blend to smooth purees.
  6. Chop other 1 tomato discarding the seeds.
  7. Transfer to the plate and keep aside.
  8. Heat oil in a pan and add chopped garlic. Sauté till they turn slightly golden brown.
  9. Add sauté chopped onions till they change colour. then add chopped - deseeded tomatoes and cook completely.
  10. Mash in between a little so that it turns mushy.
  11. Also add prepared tomato puree (from 2 blanched tomatoes).
  12. Mix well and add basil, chilli powder, oregano, chilli flakes and salt. mix well and get the sauce to a boil.
  13. Cover and simmer the sauce for atleast 5 minutes or till the sauce turns thick.
  14. Then add tomato sauce and finally, mix well.
  15. Pizza sauce is ready.

**You can even use the same pizza sauce recipe in pasta, spaghetti and lasagna.

Since I did not use any toppings as we wanted to have a plain pizza so I’ll just start with the pizza recipe.

Ingredients:
Homemade pizza base
Homemade pizza sauce
Grated cheese
Oregano 
Chilli flakes
1/2 onion finely chopped

Recipe:
  1. Roll the dough in your desired shape. Roll it out about 1/2 inch thick. Turn and stretch the dough until it will not stretch further.
  2. Fold over the edges to form the outer crust.
  3. Let the dough relax 5 minutes and then continue to stretch it until it reaches the desired size.
  4. Prick the dough with fork all over it. Always prick the dough to avoid forming air and puffing in the dough while baking.
  5. Lightly sprinkle your pizza plate (or flat baking sheet) with cornmeal.
  6. Transfer the prepared flattened dough to the pizza plate.
  7. Spread the tomato sauce, sprinkle with cheese, and place your desired toppings on the pizza (I chose only onion)
  8. Bake pizza at 220C in oven, until the crust is browned and the cheese is golden, about 10-15 minutes. If you want, toward the end of the cooking time you can sprinkle on a little more cheese.
  9. Slice and serve hot pizza.

SOOJI GULAB JAMUN

GULAB JAMUN

Gulab jamun are soft delicious berry sized balls soaked in sugar syrup & enjoyed. Gulab Jamun is one of India's most popular sweet. These are deep fried and soaked in sugar syrup. A unique way of preparing the traditional indian jamun dessert with fine semolina. It can be an alternative version of gulab jamun which does not require mawa or milk khoya. Also, once the gulab jamun is ready you would not be able to distinguish if it is made with sooji or with khoya, but, if you are addicted to the milk-based gulab jamun, only then you may find any difference.

Ingredients:
1 cup milk
1/2 cup sooji
1 cup sugar
Water
A few saffron strands
1 tbsp ghee

Recipe:
For sugar syrup-
  1. Add 3 cup water in a pan, to this add sugar and keep stirring it at medium flame till sugar melts. Add saffron strands at this point.
  2. Cover it for 7-8 minutes. Remove it from stove and let it cool.
For Gulab jamuns-
  1. In another pan, melt ghee, add milk to this and let it come to a boil.
  2. Add sooji to this slowly to avoid lumps and keep stirring continuously till it gets thickened and soaks up all the milk.
  3. Take it out in a plate and let it cool for sometime.
  4. Use your hands to make a dough out of this.
  5. Make balls of this dough in your desired shape. Avoid any cracks in the dough balls.
  6. Heat up oil in a frying pan. Fry these Gulab jamuns on medium flame.
  7. Wait till they turn a little golden brown before turning them to avoid breaking of Gulab jamuns.
  8. Fry them till they turn brown in colour.
  9. Dip these Gulab jamuns in sugar syrup and let it soak for around 10-20 minutes till they soak up the syrup.
  10. Take these out in a bowl and garnish it with dry fruits.
  11. Serve hot or chilled as per your preference.

Well who doesn’t likes chocolate and if it has ice cream along, oh! Isn’t it heaven ? And these Homemade chocolate cups are one of my favorite secret weapons! Here's a pro tip: everything looks cuter when it's served in a chocolate cup! Just picture this: mini scoops of ice cream in a chocolate cup. This recipe for chocolate cups tells you exactly how to make these delicious, edible containers. Once you learn how easy it is to make edible chocolate cups, you might find yourself making them on a regular basis. Chocolate cups are shockingly simple to make. In fact, making chocolate cups is a fun activity.
So here we have this beautiful chocolate cup to make. Let’s see how:

Ingredients:
1 cup of chocolate compound
A few balloons

Recipe:
  1. Start by melting the chocolate compound . Don't use untempered chocolate, because it will get soft at room temperature and your bowls might not hold their shape nicely.
  2. Set the melted coating or tempered chocolate aside to cool so that it is no longer warm to the touch.
  3. While the chocolate is cooling, clean properly and blow up the balloons to the size you want your bowls to be and tie them. Cover a tray with butter paper or foil.
  4. Hold the balloon by the knot on top and slowly dip the bottom of a balloon in the room temperature chocolate. Move gently to acclimatize the balloon to the temperature. Dip it until the chocolate is the depth you want your bowls to be.
  5. Gently remove the balloon from the chocolate, and set it carefully on the prepared baking sheet. Repeat until you've dipped all of your balloons.
  6. Let the balloons sit at room temperature until the chocolate or coating is entirely set. Once the coating is set, refrigerate the tray briefly to make the chocolate hard (this will make it easier to remove the balloons).
  7. To get the balloons out, first press around the sides gently, breaking the seal between the balloon and the chocolate. Then hold a balloon below the knot and gently cut a slit above your fingertips, and control the flow of air as it escapes. Slowly release the air from the balloon, and as you do, the balloon will start coming off from the sides of the bowl. If it pops, peel off a portion of it still stuck to the balloon and pull it away gently.
  8. Once all your chocolate bowls have had the balloons removed, fill them with ice cream, mousse, whipped cream, cold dessert soup, or candies.
  9. Store chocolate bowls between layers of waxed paper at cool room temperature.

These beautiful glossy bowls are entirely edible, so you can fill them with all of your favorite things, and then once you're done eating what's inside, eat the container, too!

NO YEAST BROWN BREAD

BROWN BREAD



Brown bread is a common type of bread used. Brown bread is considered much healthier than white bread as it contains whole wheat and thus, more fibre contents. This Wheat Bread is made without yeast, eggs, mixer or kneading! This simple bread recipe is moist and so delicious, that it’s hard to believe that there isn’t any yeast in it. Wheat bread is definitely a healthier alternative, because whole wheat flour has a lot more fiber and nutrition than the more processed white flours.

Why brown bread is great for our health:

Ingredients:
3 cups of whole wheat flour/ atta
2 cup milk
1 tsp salt 
1 tsp sugar
1+1/2 tsp baking powder
1/2 tsp baking soda
2 tsp oil

Recipe:
  1. Sieve whole wheat flour in a bowl, add salt, sugar baking powder and baking soda. Mix everything in.
  2. To this, gradually start adding milk that is either at room temperature or is Luke warm but not cold.
  3. Mix everything till everything comes together like a sticky dough.
  4. Handle it with very light hand since it is very stick so add a tsp of oil and bring it all together.
  5. Transfer it to a loaf pan lined with parchment paper or grease and dust it with little bit of flour.
  6. Tap it to release air bubbles.
  7. Toss it in oven at 180C for 30 minutes.
  8. Once baked completely, take it out and rub it with butter.
  9. Cut it into slices.

This is a very soft and light bread.

DOMINOS STYLE GARLIC BREAD




A freshly baked Garlic Bread plays with all of your 5 senses and takes you to a different world. Minced with the flavor of crushed fresh garlic. We all have been to Dominos a thousand times and I cannot remember a single time when I ever left Dominos without eating their Garlic Bread. And I know it for sure, this is their top most selling sider.
What garlic can do for you: 
1. Boost immunity: Garlic appears to kill cancer cells. Benefits came from raw and cooked garlic – not supplements.
2. Work as an anti-inflammatory: Garlic oil works as an anti-inflammatory.
3. Improve cardiovascular health: The verdict is still out on whether garlic improves your cholesterol levels. 
4. Give you better hair & skin: Garlic’s antioxidants and antibacterial properties can clear up your skin by killing acne-causing bacteria.

I always used to wonder if I could bake the Dominos Garlic Bread in the comfort of my home. Until I realised that it is a pretty simple recipe to make. We just need a handful of ingredients and few herbs for this..

Ingredients:
250 gms maida/all purpose flour
1+1/2 tsp active dry yeast
3/4th cup Luke warm water
1/2 tbsp sugar
4-5 cloves of garlic (medium sized)
2 tbsp oil
1 tbsp butter
1 tsp salt
1tsp oregano seasoning (even more if you like)

To make the dough:
Add:
  1. Take a bowl and add 1/4 cup all purpose flour, 1+1/2 tsp yeast, 3/4th cup Luke warm water and 1/2 tbsp sugar.
Let the yeast activate for 15-20 minutes.
  1. Add 1-1.5 cups all purpose flour (do not add all the flour together, add 1cup first and combine the dough and then add 1/2 cup and try to make a soft dough, knead the dough for 15-20 minutes and make a smooth stretchy dough).
  2. To this add 1 tbsp oil, 1tbsp butter, 4-5 medium sized crushed garlic cloves, 1 tsp salt and 1 tbsp oregano seasoning.
Knead the dough well for 15 minutes (to activate gluten) and then add 1 tbsp oil and kneed for another 2 minutes.
  1. Let the dough rest in the refrigerator for 8-10 hours.
After 24 hours,
  1. Take the dough out of the refrigerator and cut it into 2 equal sized balls and let it rest for 10 minutes.
  2. Sprinkle lots of corn meal on a flat surface (for outer crunchy coating) and make a round shapes and then flip from one side to make like a semi circle, transfer the dough to a buttered and seasoned baking tray (oregano seasoning)
  3. Cut the dough half way through into breadsticks, brush with butter (approx 100gm butter to be used) and drizzle a lot of oregano seasoning.
  4. Finally bake it in oven at 180C for 5-6 minutes and again at 220C for 4-5 minutes or until you have a nice colour.

Instructions to make the recipe:
If your bread is a bit dry, things you can do:
  1. Replace 1/4 cup Luke warm water with 1/4 cup full fat milk.
  2. Apply less cornmeal and a little more butter.
  3. Bake at 180C for 5-6 minutes and again at 220C for 4-5 minutes.

For cheesy dip:
1 tsp butter
1 tsp maida
1/2 cup milk
1 tbsp cheese spread
3 cheese slice
Salt to taste
Black pepper
Chilli flakes

Recipe:
  1. Heat the butter in a pan and add maida.
  2. Sauté on low flame for 30 seconds, take off the flame and add milk and whisk nicely.
  3. Cool till it comes to a boil and slowly add all the remaining ingredients.
  4. Whisk the mixture continuously.
  5. Serve it with hot garlic bread and have fun eating.

Ingredients to make 1 cup of seasoning:
1 tbsp salt
1 tbsp black pepper
1/2 tbsp dry basil leaves
1/2 tbsp oregano
2 tbsp garlic powder
1/4 tsp rosemary 
1/2 tsp chilli powder/flakes
**Add everything in a pestle mortar and give it a beating.
