JALEBI

A quick and easy sweet recipe under 30 mins. Learn how to make Jalebi that are crispy, juicy & delicious. Jalebi is one of the most popular desserts from Indian subcontinent. Jalebi is a spiral shaped crunchy sweet dipped in saffron laced sugar syrup, the perfect traditional Indian sweet made of all purpose flour, gram flour and sugar syrup. 

There are 2 ways to make Jalebi:
  1. Traditional method made by fermenting the batter:In traditional method, batter prepared from maida and yogurt is fermented for 24 hours.
  2. Instant version without fermentation:In instant method, the batter is prepared using instant yeast and doesn’t require fermentation.

Some point to keep in mind while trying to make homemade jalebi: 
  1. Consistency of the batter:It should be flowing consistency but not super thin or thick. If the batter is dispersing in the oil as you pipe it, maybe it’s too thin and you need to add some flour to it. If you are not able to pipe it, add little water but always remember to add 1/2-1 teaspoon at a time and then check and see if you have achieved the desired consistency.
  2. Temperature of the oil:when you pipe the jalebi batter, make sure the oil is at low heat. Too high and batter will be all over in oil as you try to make the jalebi shape. So keep temperature low when you pipe the batter in hot oil. Increase the heat once piped and then fry till crisp.

Here we are making jalebi with instant method. Making jalebi at home is easy and can also be made by a beginner. So let’s see how:

Ingredients:

For sugar syrup
1 cup sugar
1/2 cup water
Saffron 
1 tsp lemon juice
1/4 tsp cardamom powder

For jalebis
3/4th cup maida
1 tsp curd
1 tsp vinegar
1/4th cup water
1/4 tsp baking soda
Pinch of red food colour (optional)
Oil
1 tsp ghee

Recipe:
  1. In a pan, add sugar and water and stir till sugar dissolves.
  2. Add saffron threads. And stir continuously to get 1 string consistency of the syrup. Turn off the flame.
  3. To this add lemon juice and cardamom powder.
  4. Stir and cover it to rest.
  5. In another bowl, add maida, curd and food colour. Combine this well.
  6. To this add vinegar and water and whisk for another 5 minutes.
  7. In a frying pan, pour oil and let it turn hot, to this add 1 tsp ghee.
  8. Add baking soda to the batter and mix gently, it should be of flowing consistency. Now fill this batter in a sauce bottle.
  9. Make round spirals of this batter in oil in medium flame and let it float (take approximately 30 seconds). Flip over till it turns golden and crispy.
  10. Soak these hot jalebis in previously prepared warm sugar syrup for 30 seconds on both sides.
  11. Shake lightly o get rid of excess sugar syrup.
  12. Your crispy and juicy instant hot Jalebis are ready to serve.

Jalebi is often enjoyed with rabri (which is thickened milk) and the combination is simply amazing! It also tastes great with milk. Hot homemade jalebi with milk! Everyone loves it that way in my home. Hope you guys also enjoy this special treat!
