Shahi Tukra also known as Double ka Meetha is an Indian sweet, an origin dessert of Hyderabad, Telangana. It is a bread pudding, Indian sweet, a complete royal affair of fried bread slices dipped in sugar syrup and poured over with sweet thickened milk or Rabri thus a combination of crunchy and silky texture. Shahi meaning royal and Tukra/tukda meaning a piece. Thus Shahi Tukra translates to royal piece of dessert. This delicious Mughlai dessert is the star at most iftar gatherings, parties & celebrations. It is served as an after meal dessert.
Tips to make a great Shahi Tukra:
- Bread: you can use any kind of bread but it tastes best with white bread. You can also use multigrain bread for the additional nuttiness.
- Ghee: I prefer to use ghee or clarified butter instead of oil as oil doesn’t taste good compared to the richness of ghee.
- Sweet thickened milk or Rabri: this is the most tiring step which needs to be continuously looked at. It mainly requires milk and sugar but I prefer to add crushed dry fruits (I used almonds, walnuts and pistachios) to it while cooking it too.
Make the Shahi Tukra for a festive occasion in the authentic way given below:
Ingredients:
6 slices of bread
3/4th cup ghee
For simple sugar syrup
3 spoons sugar
1/2 cup water
Rose water (optional)
For Rabri
2 cups milk
3-4 spoons sugar
Saffron threads (optional)
10-12 crushed dry fruits (almonds, walnuts, pistachios)
For garnishing
20-25 toasted and crushed dry fruits
Recipe
- For frying the bread:
- Cut the corners of the bread and you can chose to toast/fry by either of the options given below;
A. Apply ghee on both the sides of the bread and toast it in a pan or in air fryer till it turns golden brown.
OR
B. Deep fry the bread pieces in ghee on medium flame till it turns golden brown.
- Rabri:
- Bring milk to a boil in a wide pot on low-medium flame for about 4-5 minutes.
- Add sugar to it and let it become half of its quantity. Keep stirring continuously till it gets thickened.
- Add crushed dry fruits to it to enhance its flavour. We can also add few threads of saffron to it (which I forgot to add).
- Keep it aside and let it cool to room temperature.
- Sugar syrup (Chashani):
- Mix water and sugar in a pan and bring it to 1-string consistency which means that it must become a little thicker.
- Add rose water to it for flavour.
- Dip the fried bread pieces in sugar syrup to make it a little softer.
- Keep the on a serving plate
- Top it with Rabri
- Garnish it with crushed dry fruits.
