INSTANT DHOKLA

DHOKLA

Dhokla is a vegetarian culinary dish that is found mainly in the Indian state of Gujarat and parts of adjacent states. Gujarati cuisine recipes are known for its vegetarian recipes which are rich and flavorful. However, most of the recipes are limited or made with just besan flour or perhaps mixing with other flour. One such easy and simple snack recipe is khaman dhokla made with fermented batter derived from gram flour or chickpea flour. Dhokla can be eaten for breakfast, as a main course, as a side dish, or as a snack. This dhokla recipe is a quick and easy one that is delicious as well as healthy! A recipe that is steamed and made in just 30 minutes, using besan with a colorful, chili tempering. The recipe is a combination of sweet and sour taste. there are several instant version which is achieved by artificially fermenting. There are a few ways to make dhokla but I like this instant recipe. In this recipe, i have used eno fruit salt which helps the batter to rise and achieve the same texture and sponginess. I personally like the instant variation as i can prepare it whenever i get the craving for this snack.

Ingredients:
For batter:
1+1/2 cup besan / gram flour
3 tbsp sooji, fine
1/2 tsp ginger paste
2 chilli, finely chopped
1/4 tsp turmeric
1 tsp sugar
pinch hing / asafoetida
1/2 tsp salt
1 tbsp lemon juice
1 tbsp oil
1 cup water
1/2 tsp eno fruit salt

For tempering:
3 tsp oil
1/2 tsp mustard
pinch hing / asafoetida
few curry leaves
3 chilli, slit
1/4 cup water
1 tsp sugar

Recipe:
Preparing the dhokla:
  1. In a large mixing bowl sieve 1+1/2 cup besan and 3 tbsp rava.
  2. Add 1/2 tsp ginger paste, 2 chilli, 1/4 tsp turmeric, 1 tsp sugar, pinch hing, 1/2 tsp salt, 1 tbsp lemon juice and 1 tbsp oil.
  3. Prepare a smooth batter adding 1 cup of water or as required.
  4. To this, add 1/2 tsp of eno fruit salt. You can alternatively use a pinch of baking soda.
  5. Microwave it for 4-5 minutes.

Preparing the tempering:
  1. Heat oil in a tempering pan. Add mustard seeds and let the, crackle.
  2. To this add add hing, curry leaves and slit chillies.
  3. Dissolve sugar in water and add this water to the pan.
  4. Further, cut the dhokla and pour tempering.

Finally, serve instant khaman dhokla with green chutney and tamarind chutney.
