CHILLI POTATO

Chilli potato is a Indo Chinese starter made with fried potatoes tossed in spicy chilli sauce. Chilli potato is quite popular in the Indian restaurants & is mostly eaten as a appetizer. It is a starter snack and can be served as it is without any side or accompaniment, although chilli potato is served as snack.
To make this chilli potato recipe, potatoes need to be crisp fried and then tossed in chilli sauce. The best point of these recipes is that you can increase or decrease the amount of sauces and spices that go into it. So you can have a less spicy or a more spicy version of the same recipe. Follow the below given recipe on how to make it at home.

Ingredients: 
For frying potatoes:
4 medium sized potatoes
6 cups water
1 tsp salt
3 tbsp corn flour
1 tsp black pepper, crushed
oil for deep frying

Chilli sauce:
2 tsp oil
1 tsp garlic, finely chopped
1 tsp ginger, finely chopped
2 medium sized onion, sliced
1 small sized capsicum, sliced
2 tbsp red chilli sauce
1+1/2 tbsp soy sauce
1 tbsp vinegar
salt to taste
1/2 cup corn flour paste, mix 3 tsp of corn flour in 1/2 cup water
1/2 tsp black pepper, crushed

Recipe: 
  1. Start by peeling the skin of potatoes and chop them to thick pieces.
  2. Further, boil the potato pieces for 2 minutes adding little salt.
  3. Then, mix corn flour and crushed pepper to these boiled potatoes.
  4. Deep fry the coated potatoes into hot oil.
  5. In another pan, heat the oil and add garlic and ginger (you can also use Ginger-Garlic paste).
  6. To this add onions and capsicum.
  7. Sauté onion till they get soften and capsicum till they slightly shrink.
  8. Additionally, add red chilli sauce, soy sauce, vinegar and salt to taste.
  9. Mix well and add corn flour paste.
  10. Mix continuously till the sauce turn translucent.
  11. Further add fried potatoes.
  12. Also, add crushed pepper and mix gently making sure the sauces are coated well to potatoes.
  13. Finally, serve crispy chilli potato hot.

**the peeled and sliced potatoes has to be boiled with water to remove the excess starch from it. otherwise, the wedges may turn soft and soggy while deep frying.
