CHOWMEIN

CHOWMEIN

Veg Chow Mein is dish made from stir fried noodles and mixed vegetables which is then flavored with Chinese sauces. The word “Chow’ means stir-fried or sautéed and ‘mein’ means noodles. It’s also one of the most popular street foods in India and a lot of other countries.
This spicy version of Veg Chow Mein noodles which is originally a Chinese food is very popular in India, Nepal and many south east Asian countries.
Veg chowmien is quite popular as a street food and children love this dish due to its tangy, smoky flavor and crunchy texture which makes it scrumptiously delicious in taste.  A recipe ready in less than 30 minutes or less!

TIPS TO MAKE THIS NOODLE DISH AT HOME:
  • Don’t overcook the noodles, take them out of the boiling water 1-2 minutes before they are completely cooked. Rinse with cold water, apply oil and keep aside till you stir fry the vegetables. Applying oil will help to prevent the noodle strands to stick with each other.
  • Use a large wok or pan to stir fry the noodles.
  • Stir fry the vegetables and noodles on high flame.
  • Since the Chow Mein is cooked on high flame, keep all the vegetables, sauces and noodles ready before you start the stir-frying step  Even mix all the sauces, vinegar and pepper in a bowl so that you can add them all in one go.

Veg Chow Mein Recipe
  1. Bring 5-6 cups of water to a boil in a large pot.
  2. Add chow mein noodles to the boiling water along with a teaspoon of salt and a few drops of oil. Boil as per packet instructions or for 3-4 minutes until almost cooked.
  3. Then drain the hot water and transfer the noodles to a bowl of cold water. Drain and set aside until ready to use.
  4. In the meantime, prepare all the vegetables. Coarsely chop the garlic. Thinly slice the onions, carrots and cabbage.
  5. The cooking time of vegetables for making chowmein is very less, so you need to keep everything ready before you start cooking.
  6. Heat some oil in a wok or large deep pan. When the oil is hot, add garlic and stir for a couple of seconds. It shouldn't turn brown, otherwise it may lead to slightly bitter taste.
  7. Immediately add the sliced onions and cook for 1-2 minutes until the onions start browning very slightly. Then add cabbage. Sauté on high flame for a minute. Add bell peppers.
  8. When making chow mein, all the vegetables need to be cooked on high heat for a short period of time till they are cooked but still crunchy to the bite.
  9. Now add some soya sauce, green chilli sauce, tomato ketchup, sugar, salt and black pepper powder to the wok.
  10. Stir to mix the sauce and spices with the vegetables.
  11. Chowmein generally has a slight twinge of sweetness, but if you don't like the sweet taste, you can skip adding sugar and tomato ketchup.
  12. Add the boiled noodles to the wok. Mix with the help of 2 ladles or forks to coat them completely in the sauces.
  13. Cook for a couple of minutes on high flame till the noodles are completely cooked.
  14. Veg Chow Mein is ready. Serve it hot as a snack or along with any Indo-Chinese side dish.
