NO BAKE BISCUIT CAKE

BISCUIT CAKE

Biscuit cake is a type of no bake cake. It is made with digestive biscuits and is optionally prepared with a chocolate glaze. Biscuit cake is an awesome & delicious no bake Dessert made with biscuits, milk, sugar, cocoa & chocolate. 

The entire recipe is divided into 3 easy steps.
  1. Make the chocolate syrup.
  2. Mix it with broken biscuits and press in a cake mould.
  3. Melt the chocolate and frost it.

Everybody loves no-bake desserts as they are easy and quick to prepare, perfect for those moments whenever you want something sweet but don’t feel like turning on the oven. This Chocolate Biscuit Cake is one of them. This is the kind of recipe that is never refused, looks quite impressive taking in count the little time involved, tastes awesome and everybody love it every time I make it.

Ingredients:
250 grams biscuits (digestive biscuits)
1/4 cup chopped dry fruits (I used almonds and pistachios)
1/4 cup chocolate shavings 

Chocolate syrup:
1 cup full fat milk or whole milk
1 tsp vanilla extract
3 tbsp cocoa powder
1/2 cup sugar
2 tbsp unsalted butter

For frosting:
1/2 cup chocolate chips (or 100 grams of sweetened chocolate bar)
2 tbsp milk
3 tbsp cream

Recipe:
Making chocolate syrup:
  1. Mix together sugar & cocoa in a pot.
  2. Stir in the milk and make a smooth mixture free of lumps.
  3. Add butter & boil this stirring often until you get a slightly thick syrup.
  4. To test, dip a spoon and check. The syrup must coat the back of the spoon.
  5. This will further thicken upon cooling. Set aside to cool down.
Prepare the pan:
  1. If you do not have a spring foam pan or pan with a removable base then line your pan with a butter paper or foil which is what I did too.
How to make biscuit cake:
  1. Break down the biscuits approximately to 1 by half inch pieces and add the dry fruits to it.
  2. When the syrup cools down pour it in 2 batches and give a good stir.
  3. Transfer the chocolate biscuits to the pan and press down with the base of a cup.
  4. Smoothen the top with a spatula.
  5. Cover it and refrigerate for 1 to 2 hours to set.
Melt chocolate:
  1. Add the chocolate, milk and cream to a small bowl. 
  2. Microwave it for 1 minute, stirring every 30 seconds until the chocolate melts and turns smooth.
  3. Or Double boiler – Alternately place the bowl over a small pot of hot water.
  4. Stir and mix until smooth.
Frosting biscuit cake:
  1. Lift the cake from the pan holding the butter paper or foil.
  2. Spread the chocolate frosting over the biscuit cake with a spatula. 
  3. Smear some chocolate on the sides & smoothen.
  4. Decorate it with dry fruits and chocolate shavings.
  5. Refrigerate until the chocolate frosting is set. 
  6. Slice the biscuit cake and serve plain or with Ice cream or tea.


This biscuit cake can be served plain or with ice cream and tea.
