FALOODA

Falooda is a South Asian cold dessert with origins in Iran. Traditionally it is made from mixing rose syrup, vermicelli, sweet basil seeds with milk, often served with ice cream. Falooda or faluda is a popular Indian summer dessert drink consisting of various elements like milk, ice cream, rose syrup etc. Falooda can be made with or without ice cream. It is just not simply a drink which you can sip away. You have to eat some edibles too. You have to have this dessert drink with a spoon. Falooda can be defined as a layered summer dessert drink made of various edible ingredients. A creamy and rich indian street food dessert recipe. The recipe for falooda is of making the required ingredients well ahead in advance and assembling serving whenever required. moreover, the recipe has a huge audience base starting from kids to the adults and from everyone.

Ingredients:
400 ml milk full fat chilled
3 tbsp sugar
1+1/2 tablespoon sweet basil seeds or sabja seeds or chia seeds (you can skip it also if unavailable)
2 tablespoons rose syrup
1/2 cup falooda sev or any thin vermicelli or semiya
4 scoops vanilla ice cream
1 tbsp custard powder
1 tbsp dry fruits
2 tbsp Tutti Frutti

Recipe:
Preparation for falooda:
  1. Boil the milk until it reduces and thickens a bit, add sugar to it.
  2. Keep half of this milk aside to cool down and in the same pan, add custard powder to the left over half milk.
  3. Add custard in 4 tbsp milk first in a cup and then add this custard liquid to the pan to avoid lumps. Keep it aside to cool down completely.
  4. Refrigerate both of these to use them chilled.
  5. Wash falooda seeds and drain them. 
  6. Boil 2 cups of water and add 2 tbsp sugar to it. Dissolve properly.
  7. Add falooda sev and cook until just done.
  8. Drain excess water and set aside.
How to make falooda:
  1. You will need 2 large serving glasses. Add rose syrup to the glass first.
  2. Then sabja seeds if using. Add then add vermicelli.
  3. Add 1 scoop ice cream.
  4. Next add custard and then pour milk.
  5. Then another scoop of the ice cream to the glass. Drizzle rose syrup again.
  6. Sprinkle some almonds, walnuts or Tutti Frutti (recipe in another post).
  7. Serve falooda immediately.
